Baked Potato, Taco Style- Gluten Free

If you search gluten free on Pinterest you suddenly have a feeling over come you that everything you pulled up isn’t healthy, you have to spend hours in the kitchen, or you need to purchase expensive alternatives.  My goal with dinners is try to use basic ingredients, not spend 200 hours in the kitchen, and make something delicious.

I’ve gone to the gluten free sections of grocery stores, the price is the first thing that catches my eye. The one or two alternatives I have tried aren’t all that good, pasta, or bread.  So I either don’t have pasta or use zucchini or squash as a pasta alternative.  It’s pretty nutritious, delicious, and a lot less calories than a pile of pasta.

Baked potatoes are wonderful, potatoes are gluten free and a excellent carb. I like to combine it with a protein, either chicken or ground beef and it’s a meal.

Baked Potato Taco Style

Baked potatoes

Potatoes, scrubbed and holes poked with a fork

I preheated my oven to 350, and have the potatoes in for 1 hour 30 minutes.

Taco Style

1 lb ground beef

3 tbsp salsa

1 cup frozen corn

Shredded lettuce

Sour cream

Cheese ( optional)

1/2 tsp chili powder

1/2 tsp cumin

1/2 tsp paprika

1/4 tsp red pepper flakes

1/2 garlic powder or fresh garlic

Start cooking the ground beef on a frying pan, as it’s starting to brown add in spices, stir.  Add salsa and take off heat.  Add cup of frozen corn into meat. And top the potatoes as you please!
