One Pot- Cheesey Broccoli, Chicken, Quinoa (1)I was on my way home and still hadn’t decided what to make for dinner then I remember that cheesy, chicken rice dinner with broccoli is easy. The only problem is I wanted it to be higher protein. So I switched out the rice for quinoa.  Double protein! Chicken and quinoa.

1/2 c quinoa

1 c of broccoli

1-3 chicken breasts

1 tsp of better than bullion

Garlic 1 tsp

Olive oil for cooking chicken

Mozerella cheese

Put quinoa in pressure cooker or rice cooker. In pressure cooker put 1 cup of water or enough to cover the quinoa then turn on high for 6 minutes.  While the quinoa is cooking I cut up the chicken breast. Pour some olive oil and the garlic in the pan, let the garlic get slightly browned before putting the chicken breast. Finish cooking.  I added 1/3 cup of water with the better than boullion and then threw the quinoa in the same pan. ( the quinoa absorbs all the liquid but it gives it the broth flavor which is delicious!)  Throw in the broccoli until its soft but not mushy. Add the mozerella cheese last.  There ya go, high protein dinner all in one pot.
